100% diet cake, orange-scented: 60 kcal, 0% fat and sugar!

Here's the perfect cake: fragrant orange, but diet to 100%. A concentrate of goodness in only 60 calories per slice, without sugar or fat.

Yes, because the sweet taste is distributed very well in the dough thanks to erythritol, a natural sweetener belonging to the group of polyols. It is obtained starting from the fermentation of sugars present in fruit and has a sweetening power equal to 70% of table glucose. It has zero calories unlike the sucrose which provides 4 kcal / g, is not cariogenic and does not affect insulin spikes in the blood. It has no aftertaste and is excellent in the kitchen.

The dough is made with flour of oats, rich in protein and B vitamins, but low glycemic index.

Finally, the dessert is decorated with inulin a simple sugar, low in calories, produced and extracted mainly from chicory roots .

The perfect dessert to soak for breakfast, but also at the end of the meal or for a sweet break without hesitation! Curious? Let's begin!

For this recipe, get:

  • erythritol, 150 g
  • baking powder : half a sachet
  • oatmeal, 200 g
  • eggs, 3 of which 2 whole + 1 egg white
  • orange, untreated: juice and zest
  • inulin, to taste.

Preheat the oven to 180 ° . Grease a 20 cm cake pan with a drizzle of oil, use a special kitchen brush to distribute a thin layer on the bottom and on the edges. Then sprinkle with the oatmeal.   If you prefer, you can line it with parchment paper, wet and well wrung.

In two different bowls, separate the yolks from the whites and whisk them until stiff. When the mixture is firm, put it aside and work the yolks with the flour, the erythritol, the orange and the yeast: you must obtain a thick and frothy dough Now join the egg whites with slow movements, from the bottom to the top so as not to disassemble them. Then transfer to the mold, level with the spatula and bake for about 40 minutes.

Take your 100% diet cake out of the oven, let it cool down and sprinkle with inulin for a powdered sugar effect. Enjoy it without remorse, enjoy your meal!
